Potato Pancakes
Ingredients
1 cup all-purpose flour
1 cup whole milk
4 eggs
2 Tbs granulated sugar
1 Tbs minced onion
1 Tbs parsley flakes
1/2 tsp. salt
1/4 tsp. baking powder
4 med. potatoes – shredded
2 Tbs all-purpose flour
Directions
Beat flour, milk, eggs, sugar, onion, parsley, salt, and baking powder until smooth. Stir potatoes and flour into mixture.
Fry 1/4 cup at a time in skillet for 1 1/2 – 2 minutes per side.
