Breakfast Pizza

Ingredients

1 can prepared pizza crust or homemade pizza dough
• 2 tablespoons olive oil
• 6 eggs
• 3 tablespoons milk
• 1/2 teaspoon dried basil
• salt & pepper, to taste
• 1/2 pound sausage, cooked and drained
• 1/4 cup cooked bacon or bacon bits
• 3 green onions, sliced and divided
• 1/4 cup red bell pepper, finely chopped
• 8 ounces pepper jack cheese, shredded
• 2 ounces extra-sharp cheddar cheese, shredded
• parsley, for garnishing

Directions

Preheat the oven to 425 degrees F.

Grease a 10×15-inch (rimmed) pan using 1 tablespoon of olive oil. Press the dough into the pan and brush with the remaining 1 tablespoon of olive oil.

Then drizzle the dough with basil. Bake until lightly browned, about 7-8 minutes.

While the dough is baking, grab a mixing bowl and whisk the milk, eggs, salt, and pepper together.

Pour the mixture into a lightly oiled skillet and cook for 3-4 minutes over medium heat, just until set. The eggs should be undercooked and shiny.

Drizzle the pizza with sausage, bacon bits (or chopped bacon), green onions, bell peppers, and the egg mixture. Then, sprinkle the cheeses on top.

Bake until the cheese is melted, for 8-10 minutes.

Remove from the oven, then sprinkle with parsley. Allow it to rest for 2-3 minutes before serving.
