Anna’s Friendship Cake

Ingredients

2 cups brandies fruit, drained
1 box butter pecan cake mix
1 small package instant butterscotch pudding
2/3 cup oil
1 cup chopped pecans
4 eggs

Directions

Preheat oven to 350. Grease & flour 13×9 pan.

Mix together all ingredients using a spoon not a mixer as it will macerate the fruit.

Pour into pan and bake for 40 to 60 minutes. Cool completely before serving, or icing.

To brandy fruit:
In a large non metal container add one cup cane sugar and 1 can pineapple tidbits, drained. Stir once every day for 1 week then add another cup of cane sugar and 1 cup maraschino cherries, drained. Stir once every day for another week then add 1 cup cane sugar and 1 can diced peaches, drained. Stir once every day for another week. When fruit is fermented it is ready to use.
