Southern Pecan Pralines

Ingredients

1 cup brown sugar – packed
1 cup cane sugar
1/2 cup heavy cream
pinch of salt
4 tablespoons unsalted butter
1 tablespoon vanilla
1 cup toasted pecans – heaping

Directions

Toast pecans: spread out on a cookie sheet and bake in a preheated 350 oven for 8 minutes. Set aside to cool. You may chop the pecans after toasting or leave whole.

While your pecans are toasting line 2 sheet pans with parchment paper, set aside.

Combine sugars, butter, salt and heavy cream in a medium heavy bottom saucepan. Bring to a boil over medium heat while stirring constantly. Continue boiling for 5 minutes (use a kitchen timer) while stirring constantly.

Turn off heat and add the butter and vanilla stir to melt butter then ad your pecans. Continue stirring until mixture starts to become creamy.

Drop tablespoons of the mixture onto the lined sheet pans and allow to spread.

Cool to room temperature and store on wax paper in an airtight container.
