Simple Raspberry Icebox Cake
Ingredients
2 cups heavy whipping cream
2 tsp vanilla
3-4 tsp sugar to taste
1 box Vanilla Wafers about 75 cookies
1 cup raspberries 1 pint
1 oz Baker’s Chocolate for shavings (or any chocolate or cocoa powder)
Directions
Pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks.
Then add the sugar and vanilla to taste (if you like it sweeter add more sugar).
Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I did about 8 at a time and then place them on their side in a 9×13 baking dish like a “log”.
Keep adding to these stacks to desired length. I did about 25 cookies in 3 rows.
Spread the remaining whipped cream over the log like icing.
Add raspberries on top and grate some chocolate to make chocolate shavings on top!
Chill the cake for a few hours (at least 4)
To serve, slice on a slight diagonal to show off the layers.
