Spicy Soba Noodle Salad with Peanut Dressing

Ingredients

8 ounce noodles soba
1 piece yellow bell pepper julienne
1 piece red bell pepper julienne
½ cup purple cabbage sliced
¾ cup edamame
¼ cup cilantro freshly chopped
¼ cup peanuts

Peanut Butter Sauce:
¼ cup peanut butter smooth
5 tablespoons water
5 tablespoons soy sauce
1 tablespoon rice vinegar
1 ½ tablespoons sesame oil
2 tablespoons honey
2 teaspoons ginger minced
3 tablespoons sriracha sauce

Directions

Cook the soba noodles according to the packaging. Rinse with cold water and drain.

In a large salad bowl, add soba noodles, bell pepper, cabbage, edamame, cilantro and peanuts. Toss.

Peanut Butter Sauce: In a small bowl, stir all the ingredients to combine. Pour into the salad bowl. Gently toss all together until you get a creamy texture.

Serve immediately or allow to chill for 30 minutes before serving.
