Thai Basil Meatballs with Peanut Basil Sauce
Ingredients
For the meatballs
3/4 lb ground pork
1/4 cup plain bread crumbs
1 tbsp Thai basil finely chopped
1 tbs garlic chives finely chopped
1 tsp fresh ginger finely grated
1 zest of 1 lime
1 tsp fish sauce
1 tsp soy sauce
1/2 tsp white pepper
1/2 onion small, finely diced
For the sauce
2 tbsp peanut butter
1 tbsp lime juice
1 tbsp rice wine vinegar
1 tbsp sesame oil
1 tbsp vegetable oil
1 tbsp water
1 tbsp soy sauce
1 tbsp Thai basil finely chopped
1 tsp lemongrass minced
1 tsp garlic minced, 1-2 cloves
2 tsp brown sugar
Directions
Preheat oven to 450 degrees F. Line a large rimmed baking sheet with foil and coat with cooking spray.
To make the meatballs, put the ground pork/pork mince in a bowl and add bread crumbs, Thai basil, garlic chives, grated ginger, lime zest, fish sauce, soy sauce, white pepper, and onion. Mix well to ensure the seasonings are well distributed.
Form the meatballs into little balls and place on foil lined and greased baking sheet. Bake the meatballs until an instant-read thermometer inserted in the center registers 165 degrees F, about 15 minutes.
Make the sauce by mixing together all of the sauce ingredients in a small pan on low heat and stirring so that there are no lumps and the sugar dissolves.
