Cajun Seafood Rice Casserole
Ingredients
1 pound shrimp deveined, unpeeled
1 large red bell pepper diced
4 tablespoons Cajun seasoning divided
1 tablespoon olive oil
1 and ½ cups long rice uncooked
5 medium garlic clove crushed
1 medium red onion sliced
1 and ½ cups chicken broth
2 tablespoons heavy whipping cream
1 cup tomatoes diced
2 tablespoons tomato paste
lime wedges for garnish
Directions
Pat dry shrimp to remove excess of water. Add in a bowl with bell peppers and season with 2 tablespoons of Cajun seasoning and ½ tablespoon oil.
Heat oil in a medium-size skillet on medium-high heat and sear shrimp for 2 minutes on each side with bell peppers. Remove and set aside.
Clean the skillet with a kitchen towel. Heat the rest of the oil on medium heat and stir in the rice, Cajun seasoning, garlic, and onion for a few seconds.
Pour chicken broth with heavy cream and diced tomato and tomato paste. Stir all together and bring to a simmer.
Decrease heat to low heat and cook covered for 20 minutes. Remove cover.
Switch off the heat and add shrimp. Cover again for 1-2 minutes for the shrimp to warm a bit.
Garnish and serve.
