Mediterranean Chicken Gyros with Creamy Feta Tzatziki
Ingredients
For the Chicken:
1 lb chicken breast, sliced
2 tablespoons olive oil
1 tablespoon lemon juice
2 garlic cloves, minced
1 teaspoon oregano
1/2 teaspoon cumin
Salt and pepper, to taste
For the Feta Tzatziki:
1/2 cup Greek yogurt
1/4 cup feta cheese, crumbled
1 cucumber, grated and drained
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper, to taste
For Serving:
4 pita breads
1/2 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
Directions
In a bowl, combine the sliced chicken, olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Mix well to coat the chicken and let it marinate for at least 30 minutes.
While the chicken marinates, prepare the feta tzatziki. In a separate bowl, mix together the Greek yogurt, crumbled feta cheese, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper until well combined.
Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and golden brown.
Warm the pita breads in a skillet or oven for a minute.
To assemble the gyros, place some grilled chicken in the center of each pita. Top with halved cherry tomatoes, sliced red onion, a generous dollop of feta tzatziki, and chopped fresh parsley.
Wrap the pita around the fillings and serve immediately.
