Tzatziki Sauce

Ingredients

1 tablespoons red wine vinegar
1 teaspoon olive oil
1/2 teaspoon freshly minced garlic – we like garlic so I used a little more.
6 ounces plain fat free Greek style yogurt – I used one of the small individual cups.
1 tablespoon chopped fresh dill – I used 1 teaspoon dried dill
1 1/2 tablespoons shredded cucumber, excess liquid squeezed off
1/2 of a lemon juiced
1/8 teaspoon salt, or to taste
pepper to taste

Directions

Drain any excess liquid from yogurt. I used cheese cloth and let it hang in a bowl for about an hour in the fridge. You can also do this with the cucumber instead of squeezing.

Combine vinegar, olive oil, yogurt, dill, shredded cucumber, freshly minced garlic, lemon juice and salt, stirring well with a whisk to make the Tzatziki Sauce. Give it a taste and adjust the flavors as needed. Cover and chill.
