Bruschetta
Ingredients
1 pound Roma tomatoes about 6-8, seeded and diced
¼ cup olive oil
3 cloves garlic minced
2 teaspoons balsamic vinegar
½ cup torn fresh basil
Kosher salt
Freshly ground black pepper
1 loaf French baguette
Balsamic glaze optional, for serving
Fresh basil optional, for garnish
Directions
Combine tomatoes, olive oil, garlic, balsamic vinegar, and basil in a medium bowl.
Season generously with salt and pepper and let sit for at least 15 minutes.
Meanwhile, cut baguette into half-inch slices and toast in the oven at 350 degrees for about 3-5 minutes, or until golden and crispy around the edges. Set aside to cool before serving.
Place a spoonful of the tomato mixture on top of each baguette slice and top with fresh basil and a drizzle of balsamic glaze (optional).
Serve immediately or you can also serve this as a dip. Place the tomato mixture in a bowl with a serving spoon, and spread the crisp bread around it on a serving plate.
** You can also spread a little soft goat cheese, cream cheese, or mascarpone on the bread before adding the tomato mixture for a creamy bite.
