Charro Lentils

Ingredients

6 Slices bacon, cut into 1-inch pieces
8 Ounces chorizo
4 hot dogs, thinly sliced
2 roma tomatoes, diced
2 jalapenos, seeded and diced
1 Cup onion, diced
1 Tablespoon garlic, minced
2 Cups lentils
6 Cups chicken broth, or beef broth
2 Teaspoons salt
2 Teaspoons black pepper
1 Teaspoon Mexican oregano
1 Teaspoon ground cumin

To Serve:
cilantro
Mexican cream
lime
jalapeno slices

Directions

In a deep sauté pan, cook the bacon and chorizo.

Add the hotdogs, tomatoes, jalapenos, onion and garlic and continue cooking for 3 to 4 minutes.

Add the lentils, spices and pour in the broth.

Cook over medium heat for an hour. Stir occasionally.

When the lentils are soft, serve with some cilantro, lime, and Mexican cream.
