Beef And Bean Casserole
Ingredients
1 pound ground beef 90/10
2 14-ounce cans red kidney beans drained
1 tablespoon chili powder
1 ½ cups chunky salsa
1 14-ounce can diced tomatoes
8 ounces sharp Cheddar cheese shredded
Directions
Preheat the oven to 400º Fahrenheit.
Brown ground beef over medium heat in a large skillet. Remove excess fat.
Blend canned diced tomatoes into a food processor. Purée until smooth.
Combine the cooked ground beef, beans, tomatoes, salsa, and chili powder in an ungreased 9×13 baking dish. Sprinkle with cheese.
Cover with foil and bake for 25-30 minutes. Remove foil and continue to bake uncovered for an additional 5-10 minutes.
