Enchilada Casserole
Ingredients
1 pound ground beef
1 can (10 ounces) enchilada sauce
1 cup salsa
6 flour tortillas (10 inch)
2 cups fresh or frozen corn
4 cups shredded cheddar cheese
Directions
Preheat oven to 350 degrees F. In a large skillet over medium heat, cook beef until no longer pink; drain. Add enchilada sauce and salsa to the skillet; set aside.
Grease a 9×13 baking dish. Place 2 tortillas at the bottom. It’s ok if they overlap. Take one-third of the beef mixture and spread it over the tortillas. Add 1 cup of corn and sprinkle with cheese. Repeat this process of layering until your casserole is ready to go in the oven.
Bake uncovered for 30 minutes or until the cheese is bubbly. You can always broil at the end if you desire a little browning of the cheese.
