Stir-Fried Hokkien Noodles with Beef and Shrimp
Ingredients
For the noodles:
¾ pound flank steak or skirt steak thinly sliced
2 tablespoons soy sauce
2 tablespoons Shaoxing wine or mirin
1 teaspoon sesame oil
¼ teaspoon ground white pepper
2 tablespoons cooking oil
2 shallots thinly sliced
4 garlic cloves minced
½ pound peeled and deveined shrimp
2 cups thinly sliced cabbage
1 pound fresh Hokkien noodles
For the sauce:
½ cup sweet soy sauce
2 tablespoons oyster sauce
2 tablespoons soy sauce or dark soy sauce
1 tablespoon chile paste
Directions
Cook the noodles according to the package directions.
In a medium bowl, toss together the steak, soy sauce, wine, sesame oil, and white pepper. Let stand for about 15 minutes to marinate while you prep the other ingredients.
In a small bowl, stir together the cooking sauce ingredients: sweet soy sauce, oyster sauce, dark soy sauce, and chile paste.
Heat the oil in a large skillet or wok over high heat. Add the shallot and garlic and stir-fry for a couple of minutes until the shallot softens. Add the beef along with the marinade and stir fry for another 2 to 3 minutes, until the meat is mostly brown. Now add in the prawns and cook, stirring, for another minute. Add the cabbage and noodles and add the cooked noodles and stir for another minute. Finally, add the sauce and cook, tossing the noodles, meat, and veg together until it is all well combined and the noodles are coated with the sauce.
