Chicken Pasta Bake
Ingredients
16 ounces pasta uncooked, such as bowtie or elbow macaroni
3 tablespoons butter unsalted
1 chicken breast cut into small pieces
2 tablespoons all-purpose flour
1 cup heavy cream
3/4 cup Parmesan cheese grated
1 cup mozzarella cheese shredded
salt and pepper to taste
parsley for garnish
Directions
Preheat your oven by turning your broiler on. Cook pasta according to packing instructions. Before draining, reserve 2 cups of water. This will help thin the sauce later.
In a large, cast-iron or oven-proof skillet, melt 1 tablespoon of butter. Add cubed chicken, and cook through. Remove the chicken to a plate.
Add the remaining 2 tablespoons of butter to the same skillet. Once the butter has melted, add the heavu cream and whisk with the butter. Add flour and whisk until thick. Season with salt and pepper, then add the Parmesan cheese. Continue whisking vigorously until the sauce is quite thick. Add some of the reserved pasta water to help thin the sauce. Add the chicken back to the skillet along with the cooked pasta. Stir well until the chicken and pasta are well-coated.
Top the dish with mozzarella cheese and place under the broiler for 5 minutes until golden brown. Watch carefully to avoid burning. Add more parmesan to the top and parsley for garnish, if desired.
