Strawberry Spinach Salad with Grilled Chicken
Ingredients
1 chicken breast
Salt
Pepper
Cayenne pepper, optional
1 oz mild cheddar cheese, cubed or shredded
1/2-3/4 C strawberries, hulled and quarter
5 oz Earthbound Farm organic spinach
Light dressing or vinaigrette
Optional additions:
Sliced red onions
Avocado
Bacon
Nuts
Directions
If using a stove top grill pan, preheat over medium heat. Lightly spray with favorite cooking oil. Pound chicken to an even thickness. Season both sides with salt, pepper and optional cayenne pepper. Cook in preheated pan for 3-4 minutes per side or until the internal temperature reaches 160-165°F. Transfer to a cutting board to rest.
Cube or shred cheese. Hull and quarter strawberries. Slice chicken into strips.
Add spinach to 1 medium serving bowl or divide between two large salad bowls. Arrange cheese, strawberries and chicken as desired, in addition to other desired toppings. Pour desired dressing over salad and serve or enjoy.
