Cowgirl Breakfast Casserole

Ingredients

12 ounces chorizo, cooked and fat drained
12 corn tortillas, cut into strips
1 cup shredded, Mexican blend cheese
4 ounces diced red pimientos, drained
3 green onions, chopped
8 large eggs, beaten until frothy

Directions

To begin, preheat the oven to 350 degrees F.

Spray an 11×7-inch baking dish with nonstick cooking spray, set aside.

Combine the tortilla strips, chorizo, cheese, onions, pimientos, and eggs in the prepared baking dish. Spread the mixture evenly.

Bake for 25 minutes on the center rack.

Let cool before cutting into squares and serve!
