Smoked Sausage and Potato Skillet
Ingredients
4 to 6 Tablespoons olive oil
1½ Pounds baby potatoes, small, quartered
½ Teaspoon salt
½ Teaspoon black pepper
1 onion, diced
1 red bell pepper, sliced
½ Teaspoon garlic, minced
1 Package smoked sausage
2 Teaspoons Italian seasoning
¼ Cup chicken broth
2 Tablespoons Parmesan, grated
1 Teaspoon parsley, freshly minced
Directions
Heat the olive oil in a large sauté pan or skillet.
Add the potatoes and season with salt and pepper. Cook over medium heat for 5 minutes before stirring. Continue cooking for 5 minutes, then stir again.
Add the onions and continue cooking for another 5 minutes. Add a little more oil if necessary.
Add the bell pepper and garlic and cook for 1 minute.
Add the sausage and season with Italian seasoning. Cook for 2 to 3 minutes.
Pour in the chicken broth and cook over medium low for 5 minutes.
Remove from the heat and serve garnished with Parmesan and parsley.
