Southwest Rice Salad
Ingredients
2 cups MinuteĀ® Brown & Wild Rice Cups
1 can (15.5 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes and green chilies, drained
1/4 cup chopped fresh cilantro leaves (optional)
Directions
Heat rice according to package directions.
Combine brown and wild rice, black beans, tomatoes and green chilies in a medium bowl. Stir to combine.
Top with cilantro, if using.
