Marinated Zucchini Salad
Ingredients
2 zucchini thinly sliced
4 tablespoon apple cider vinegar
4 cloves garlic pushed through a garlic press
2 teaspoon honey
6 tablespoon olive oil
5 tablespoon dill chopped
½ teaspoon salt
raspberries, pomegranate seeds optional for garnish
Directions
In a medium bowl combine apple cider vinegar, garlic, honey, olive oil, dill and salt.
Using a knife or vegetable peeler, slice zucchini into thin ribbons.
Toss zucchini with the marinade and let it sit on a counter for 20 minutes.
Before serving, garnish with raspberries or pomegranate seeds if desired.
