Pink Pasta

Ingredients

12 ounces pasta
1 medium beetroot cooked and pureed
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic minced
Salt and pepper to taste

Directions

Cook pasta according to package directions. Drain and set aside.

In a large skillet, heat the beetroot puree and garlic over medium heat.

Add the heavy cream and stir to combine.

Add the Parmesan cheese and continue to stir until the sauce thickens.

Season with salt and pepper to taste.

Toss the cooked pasta in the sauce until well coated.

Serve with your choice of toppings and enjoy!
