Broccoli & Parmesan Quinoa

Ingredients

1/2 cup quinoa
6 oz frozen broccoli florets, thawed and finely chopped
1 cup vegetable broth
1/2 freshly grated Parmesan cheese
salt & pepper

Directions

Add the quinoa and vegetable broth to a medium size saucepan over medium-high heat. Bring to a boil, reduce heat to medium-low and cook, stirring occasionally, about 15 minutes or until the liquid has been absorbed.

Take off the heat and stir in the chopped broccoli, cover the pan with a lid and let rest 10 minutes. Remove the lid and stir in the Parmesan cheese. Add salt and pepper to taste.
