Baked Sweet Potatoes and Pecans
Ingredients
5-6 sweet potatoes
1/2 cup chopped pecans
1 1/2 cups brown sugar
1/2 cup butter, melted
1/4 cup potato liquid (reserved from boiling the potatoes)
1/2 tsp allspice
Directions
Preheat oven to 350
Boil the sweet potatoes for 20 minutes. Remove from water and let cool until you are able to handle them. Peel and cut into chunks. Save 1/4 cup of the water from boiling the potatoes, discard the rest.
Place chunked sweet potatoes in a casserole dish and mix in the pecans, or you could just sprinkle them evenly on top.
Mix together brown sugar, butter, potato liquid, and allspice until sugar dissolves. Pour on top of sweet potatoes and pecans.
Bake uncovered at 350 for 30 minutes.
