Lisa’s Easy Mashed Potato Casserole
Ingredients
2 cups water
2 cups half-and-half or whole milk
6 tablespoons butter
2 pouches (4.7 oz each) instant mashed potatoes (any flavor)
4 oz cream cheese (softened)
1/2 cup sour cream
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
salt & pepper to taste
1 1/2 cups shredded Cheddar cheese (6 oz)
Directions
Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
In 3-quart saucepan, heat water, half-and-half and butter to boiling; remove from heat.
Stir in both pouches of potatoes just until moistened.
Let stand about 1 minute or until liquid is absorbed. Beat with fork until smooth.
Stir in cream cheese, sour cream, garlic powder, and onion powder. Season with salt and pepper to taste.
Spoon all of the potatoes into your prepared casserole dish.
Sprinkle cheese on top.
Bake uncovered 30 minutes. Let stand 5 minutes & serve warm.
* If your potatoes seem too think, add milk gradually to your desired texture.
