Lisa’s Cheesy Au Gratin Potatoes
Ingredients
6 Medium potatoes, pared and sliced
3 Tablespoons butter
2 Tablespoons flour
1 Teaspoon dry mustard
1 Teaspoon salt
1/2 Teaspoon pepper
1/2 Teaspoon paprika
1/4 Teaspoon garlic powder
1/4 Teaspoon Thyme
1 Tablespoon dried chives (optional
1/4 Teaspoon nutmeg (optional)
1/4 Teaspoon cayenne pepper (optional)
1 cup milk
1 cup reserved potato cooking liquid
8 oz. Velveeta cheese, cubed
2 cups shredded cheddar cheese
Directions
Cook potatoes in boiling water for 10 to 15 minutes, or until tender. Drain, reserving 1 cup cooking liquid.
Place potatoes in a buttered 2 quart baking dish with lid.
Melt 3 tablespoons butter in a sauce pan. Add flour, dry mustard, salt, and pepper, paprika, garlic powder, Thyme, dried chives (optional), nutmeg (optional), and cayenne pepper (optional).
Add reserved cooking liquid and milk. Cook and stir until thickened and bubbly.
Stir in the cubed Velveeta cheese and 1/2 cup of the shredded cheddar cheese. Cook until cheese is melted.
Pour sauce over potatoes.
Cover and bake in 350 oven for 45 minutes.
Remove from the oven, top with the remaining shredded cheese and return to the oven uncovered for about 5 minutes, or until cheese begins to brown.
